Paleo eating takes more planning than opening a box of cereal each morning. This year, I'm learning to take care of myself first, instead of always putting others needs in front of my own. So this morning I took time for myself & made myself a nummy lunch. Today I'm having egg salad (using avocado instead of mayo), fresh strawberries, and a carrot and radish salad with a honey & rice wine dressing (tastes great but stinks up the house, according to my teenage son).
